Managing health issues: overcoming health challenges through nutrition

This week saw my final project in the Open University module K310 Public health: health promotion and health security that I have been studying since October 2023. The module was certainly not the one I would say I most enjoyed of the degree course thus far, but it is now over with the final project submitted: all I can do now is wait for the result.

However, as a household, we have been dealing with more than our fair share of health issues in the last year. With me having been diagnosed as autistic in January, and Andrew having his own health issues, we’re both taking a step back from much of what we have done in the past to concentrate on looking after ourselves and each other.

One part of this for me is ensuring I eat as healthily as possible. I know that I regularly try to make changes but rarely do they stick. But with no university study to keep me busy, I will try to be more sensible about my food in the coming weeks and months.

On the days that I receive my dialysis care, it has become my practice to call into McDonald’s on the way to my session and have breakfast there. Usually, this now consists of a pancake and sausage meal with a drink. While on dialysis, I get tea, toast and marmalade, and often some fruit salad. Afterwards, is when I have the problem. I rarely know what to have in the evenings.

Andrew is very good at making pasta and pasta sauce, and I know he intends for us to have that as a meal on Tuesdays and Thursdays.

So, if anyone has any other suggestions for recipes that work for low potassium and low sodium diets, please get in touch.
